From Simple Pleasures to Magic Moments: Tahini Aubergines and Green Fishballs

Every day offers at least three opportunities to step away from the hustle and enjoy a moment of pure bliss: breakfast, lunch, and dinner. Snacks and tea time are bonus chances. Daily, a cafe in Bloomsbury, London, and the name of a new cookbook, aims to be a haven for simple, delicious moments. Here are two recipes that transform ordinary meals into magic.

Tahini Aubergines

Ingredients: 2 large aubergines, 4 tbsp tahini, 2 tbsp lemon juice, 2 cloves garlic (minced), salt, olive oil, parsley for garnish.

  1. Preheat oven to 200°C (400°F). Slice aubergines lengthwise and score the flesh. Brush with olive oil and season with salt. Roast for 25-30 minutes until soft and golden.
  2. Mix tahini, lemon juice, garlic, and a pinch of salt. Add water gradually to achieve a drizzleable consistency.
  3. Serve aubergines drizzled with tahini sauce and garnished with parsley.

Green Fishballs

Ingredients: 500g white fish fillets, 1 cup fresh coriander, 1 cup parsley, 2 spring onions, 1 egg, 3 tbsp flour, salt, pepper, oil for frying.

  1. Blend fish, herbs, and spring onions in a food processor until smooth. Add egg, flour, salt, and pepper; pulse to combine.
  2. Shape into small balls. Heat oil and fry until golden and cooked through, about 4-5 minutes.
  3. Serve with lemon wedges and a side salad.
