Tahini Aubergines
Ingredients: 2 large aubergines, 4 tbsp tahini, 2 tbsp lemon juice, 2 cloves garlic (minced), salt, olive oil, parsley for garnish.
- Preheat oven to 200°C (400°F). Slice aubergines lengthwise and score the flesh. Brush with olive oil and season with salt. Roast for 25-30 minutes until soft and golden.
