Ingredients (Serves 2):

  • 4 large eggs
  • 200g green beans, trimmed
  • 100g baby spinach
  • 1 tbsp white miso paste
  • 1 red chilli, finely sliced (seeds removed for less heat)
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Optional: crusty bread for serving

Method:

  1. Bring a medium pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until tender but still crisp. Drain and set aside.
  2. In a small bowl, whisk the miso paste with 2 tablespoons of warm water until smooth.
  3. Heat the olive oil in a large frying pan over medium heat. Add the sliced chilli and cook for 1 minute until fragrant.
  4. Add the cooked green beans and the miso mixture to the pan. Toss everything together for about 2 minutes, allowing the beans to coat in the flavorful sauce.
  5. Stir in the baby spinach and cook until just wilted, about 1 minute. Season with a pinch of salt and pepper.
  6. Create four small wells in the vegetable mixture. Crack an egg into each well. Cover the pan with a lid and cook for 3-4 minutes, or until the egg whites are set but the yolks are still runny.
  7. Serve immediately, seasoned with an extra grind of black pepper.
